Caramel Rice Krispie Treats

This is just as easy as the traditional Rice Krispie treats, but uses caramel in place of marshmallows and tastes much richer!!  You can buy the caramel in 5 lb. blocks.  I get mine at a Mennonite store, but it is also sold on Amazon.

  1. Cut caramel into slabs for easier melting and place into deep sided pan with butter and milk or half & half. Melt over medium low heat. Stir in cereal. Spread into greased 9" square pan and let cool.
  2. If you would like, you can melt the chocolate chips over low heat and drizzle over the top. Refrigerate to set.

Easy Homemade Pasta

I was looking through various pasta recipes today, and they were all basically the same:  flour, eggs, salt, some with or without oil or water…  But a comment on one of the recipes really struck me.  It was saying that they prefer this recipe over the one that they were reviewing because it was so much easier to handle.  I decided I needed to give it a try, so I made a batch of noodles as a side dish.  I think these were the best noodles I have ever tasted in my life!  And the dough was indeed very easy to work with.  I am definitely going to make this recipe again!!!

  1. Combine all ingredients in bowl of stand mixer until a ball of dough is formed. Wrap in plastic wrap and set aside for 30-60 minutes. Process with Kitchen Aid pasta attachments. Cook in boiling salted water for 2 minutes.

Cinnamon Sour Cream Biscuits

These actually have more the consistency of muffins, but they are wonderful, regardless!  I make them for me and our grandsons with raisins, but substitute chocolate chips for the raisins for my husband.

  1. If you are using a baking stone, place that in the oven. Preheat oven to 450 degrees.
  2. In large mixing bowl, combine flour, sugar, baking powder, cinnamon, salt, and baking soda. Cut in butter. You can make up a large batch and store it at this point, in the freezer or refrigerator.
  3. Add sour cream, milk and raisins or chocolate chips, stirring just until combined.
  4. If you are not using a baking stone, line the cookie sheet with parchment paper. Scoop out onto baking sheet (I use a 2 oz. scoop). Bake for 12 minutes. Cool slightly, then drizzle with glaze.
  5. This will make 11-12 mini muffins. Just use a 1 oz. scoop and bake in the mini muffin maker for 5 minutes.
Recipe Notes

The biscuit ingredients before adding the milk, sour cream, and raisins or chocolate chips measures 1 3/4 cups and weighs about 236 grams, so if you want to, you can mix up a big batch of the flour mixture, store in the refrigerator or freezer, then measure out just what you need and continue with the recipe.

Tater Tot Breakfast Casserole

This is a very popular breakfast casserole at our family get-togethers.  Obviously, you can make substitutions.  If you don’t like sausage, you can substitute ham, Italian sausage, bacon or whatever.  If you don’t want cream of mushroom soup, use cream of celery, cream of onion, or whatever cream soup you like.  I make my own soup for this because of my food allergies.  However, if you would like to use canned soup, use 1 can of soup and 1 can of milk.

Instructions
  1. Place sausage in large, deep skillet. Cook over medium high heat until evenly browned. Drain, crumble, set aside.
  2. Preheat oven to 350 degrees. Lightly grease a 9x13" baking dish.
  3. In a large bowl, beat together eggs and soup. Stir in sausage; pour into prepared pan. Add tater tots, distributing evenly on top of egg mixture.
  4. Bake in preheated oven for 45-50 minutes. Remove from oven and sprinkle on cheese, bake an additional 10 minutes.

Chili Without Beans

I learned that this is a Texas style chili because it has no beans.  Personally, I prefer my chili with beans, but this works fantastic in this dip!

  1. Brown beef with onions, sweet pepper, jalapenos and garlic in the oil. Add remaining ingredients and simmer for a couple of hours. Add water as needed for the consistency that you desire.
  2. Serve with desired condiments: corn chips, cheese, sour cream, green onions, cilantro, etc.

If you don't have beef base, just use beef broth in place of the beef base and water.  Just read ingredients first if you have food allergies!

Chili Cheese Dip

I used to make this recipe for parties a lot!:  https://www.cherylsrecipes.net/recipe/chili-dip/  It was super fast and easy.

However, when I found out that I had wheat and soy allergies, I could no longer make it because every single canned chili I can find has soy (along with a lot of preservatives) in it!  I am also not a big fan of Velveeta because it is so processed.  So I came up with this recipe as a replacement and it is even better, although obviously not as easy!  It is still not too difficult though.  I will certainly be making it again!

If you would rather used canned chili for the convenience, just use 3 cans of chili in this recipe.  Or, if you have a favorite chili recipe (with or without beans), substitute about 6-7 cups of that for this chili.

Chili with no beans
  1. In a large, deep pot, brown ground beef, onion, sweet pepper, garlic, and jalapeno in the oil.
  2. Add all remaining ingredients except cheese and cream. Simmer for a couple of hours until it is cooked down and quite thick.
Dip
  1. Add cheeses to the chili. Stir over medium or low-medium heat to melt the cheeses. Add a little heavy cream for a better texture.
  2. Serve with tortilla chips. I garnished mine with cilantro. My husband liked it even better with the cilantro.

Chili Dip

Sour Cream Dip
