Easy Homemade Pasta

I was looking through various pasta recipes today, and they were all basically the same:  flour, eggs, salt, some with or without oil or water…  But a comment on one of the recipes really struck me.  It was saying that they prefer this recipe over the one that they were reviewing because it was so much easier to handle.  I decided I needed to give it a try, so I made a batch of noodles as a side dish.  I think these were the best noodles I have ever tasted in my life!  And the dough was indeed very easy to work with.  I am definitely going to make this recipe again!!!

  1. Combine all ingredients in bowl of stand mixer until a ball of dough is formed. Wrap in plastic wrap and set aside for 30-60 minutes. Process with Kitchen Aid pasta attachments. Cook in boiling salted water for 2 minutes.

Cinnamon Sour Cream Biscuits

These actually have more the consistency of muffins, but they are wonderful, regardless!  I make them for me and our grandsons with raisins, but substitute chocolate chips for the raisins for my husband.

  1. If you are using a baking stone, place that in the oven. Preheat oven to 450 degrees.
  2. In large mixing bowl, combine flour, sugar, baking powder, cinnamon, salt, and baking soda. Cut in butter. You can make up a large batch and store it at this point, in the freezer or refrigerator.
  3. Add sour cream, milk and raisins or chocolate chips, stirring just until combined.
  4. If you are not using a baking stone, line the cookie sheet with parchment paper. Scoop out onto baking sheet (I use a 2 oz. scoop). Bake for 12 minutes. Cool slightly, then drizzle with glaze.
  5. This will make 11-12 mini muffins. Just use a 1 oz. scoop and bake in the mini muffin maker for 5 minutes.
Recipe Notes

The biscuit ingredients before adding the milk, sour cream, and raisins or chocolate chips measures 1 3/4 cups and weighs about 236 grams, so if you want to, you can mix up a big batch of the flour mixture, store in the refrigerator or freezer, then measure out just what you need and continue with the recipe.

Sour Cream Dip

This recipe came from my brother-in-law’s sister, Monica.  This is super quick and easy!  I took it to a family get-together yesterday and it was very popular!  Serve this with tortilla chips.

  1. Heat a large skillet over medium high heat. Add the oil and brown the ground beef.
  2. As the beef is cooking, slice the mushrooms and add the mushroom slices to the partially cooked ground beef.
  3. Combine the seasonings as that finishes cooking.
  4. Add all other ingredients, except sour cream, to the cooked beef. Stir to combine and cover.
  5. Bring to a boil, then lower heat to medium low and allow to simmer for 10-12 minutes, or until the noodles are cooked through. The time may vary depending on the type of noodles you use. Read the directions on the package. This gluten free Barilla fettuccine takes 13-14 minutes, but white spelt pasta takes 7 minutes!
  6. Add the sour cream and stir. If it is too watery, let sit for 5 more minutes. Serve immediately.

Beef Stroganoff

  1. Trim fat from beef and cut crosswise into 1/2" slices. In a large skillet heat 2 T. oil or wine, add onion and garlic and cook until tender.
  2. Add beef and brown well on both sides.
  3. Add mushrooms and saute 5 minutes longer.
  4. Mix the flour with the beef, then add water, soup base, garlic, salt and pepper to the skillet. Bring to the boiling point, stirring constantly. Reduce heat, continue to stir and simmer until thickened.
  5. Add sour cream and mix well. Continue to simmer until hot, but do not boil.
Recipe Notes

Although spelt is actually a type of wheat flour, most people with wheat allergies can digest spelt flour with no problem.  Obviously, you should not eat spelt if it is a problem for you.

  1. Preheat oven to 425. Remove papery skin from garlic head, but do not peel or separate cloves. Place on a piece of foil and drizzle with olive oil. Wrap in foil and place on a baking sheet.
  2. Place each onion on a piece of foil, cut side down. Drizzle with olive oil, but do not wrap with foil. Place on baking sheet with garlic and bake for 30 minutes. Remove from oven and wrap onions with foil. Return to oven for another 30 minutes.
  3. After onions and garlic have cooled awhile, separate garlic cloves and squeeze to extract garlic pulp. Discard the skins. Put all ingredients in food processor. Process until it is well mixed and a smooth consistency.
Recipe Notes

You can also use the garlic cloves that are already peeled.  We buy a large bag from Costco and freeze them.  Then we just take out whatever amount we need and use it.  For this recipe, just put a handful on the piece of foil and continue as described.  No need to extract garlic pulp from the skins this way!

Baked Potato Soup

Thick and creamy, uses up your leftover baked potatoes.  Or make extra potatoes for this soup!

To make this gluten free, just substitute 1/3 cup cornstarch or potato starch mixed with some of the milk in place of the flour.  Bring the rest of the milk to a boil, then slowly add the cornstarch mixture and stir to thicken.  Or sorghum flour works great for soups and sauces.

  1. In a soup kettle or Dutch oven, melt butter. Cook onions and celery for a few minutes. Stir in flour. Heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes. Bring to a boil, stirring constantly.
  2. Reduce heat and simmer 10 minutes. Add bacon, cheese, sour cream, salt, and pepper, and stir until cheese is melted. Or sprinkle cheese and bacon on top as a garnish.

  1. Grease a lasagna pan. Saute onion in butter in 4 qt. pan. Add salt and pepper as it is cooking. Add milk and chicken broth and bring to a simmer. Combine heavy cream and cornstarch. Add to pan and stir until it is blended. It should begin thickening very quickly. Turn off heat and add sour cream and cheese. Spread potatoes in greased lasagna pan. Pour milk sauce over potatoes.
  2. Cover with foil and bake at 375 for 2 hours or more. Let set for 15 minutes or so and stir before serving.
Recipe Notes

For the chicken broth, I use about 2 tsp. Better than Bouillon Organic Chicken Base and add water to make 1 cup.  This ensures that the recipe remains gluten-free and soy-free.

  1. Butter a 9x13" baking dish. Cook onion with sausage in skillet, crumbling as it cooks. Beat eggs, heavy cream, milk, sour cream and seasonings. Add cooked sausage and onions to mixture. Pour into prepared baking dish. Top with green chilies and some cheese. Top with tater tots and remaining cheese. Cover and refrigerate overnight. (This can be made just before baking, but the tater tots should be thawed.)
  2. In the morning, preheat oven to 375 and remove pan from fridge. Bake 50-60 minutes or until golden. This can be served with salsa and sour cream or green or red chilie.
