Ingredients
- 1 T. avocado oil
- 1/2 sweet onion diced
- 1 small red skinned potato diced
- 1/4 sweet pepper diced
- 2 oz. spinach
- 6 grape tomatoes
- 1/2 oz. sharp cheddar cheese shredded
- 2 eggs cooked as desired

Instructions
- In a skillet over medium-medium high heat, add avocado oil. Add onions and potatoes.
- Add sweet pepper. When potatoes are mostly cooked through, add spinach and tomatoes to skillet and cook to wilt spinach leaves. Season with salt and pepper as desired. Put into serving bowl and top with cheese and eggs.
