Instructions
  1. Peel, core and slice apples to make about 5 cups. Place apples in 10x6x2" baking dish.
  2. In a mixing bowl, combine oats, brown sugar, flour, cinnamon and salt. Cut in butter until mixture is crumbly. Pieces of butter should be the size of coarse crumbs. Sprinkle mixture over apples.
  3. Bake in 350 degree oven for about 40 minutes, or until fruit tests done with a fork. Serve warm with ice cream or whipped cream.
Recipe Notes

Crock Pot Recipe:  Grease crock.  Put apples slices in crock pot.  Spread topping over apples.  Cook on high for 2-3 hours.

Peach Crisp:  Substitute 2 1/2 lb. peaches (about 10 medium) for the apples.

Amish Breakfast Casserole

This breakfast casserole uses meat, onions, peppers, potatoes and eggs, along with a generous amount of cheese.  We made a double batch of this for a family vacation and combined sausage, bacon and Canadian bacon for the meats, and used a variety of cheeses, including Swiss, Italian, sharp cheddar, Mexican blend, and more.  It was a huge hit!

  1. Saute the bacon in a large skillet. When it starts to brown, add sausage, onions, sweet pepper, garlic and jalapenos (if you are using them). Saute until the sausage is fully cooked. Season with salt, pepper and garlic powder as it is cooking. Drain fat.
  2. Preheat oven to 350 degrees if baking now.
  3. In a large bowl, combine potatoes, hot sauce (opt.), meat and veggies. Stir in cottage cheese and all but 1/2 cup of cheddar and 1/2 cup of Swiss cheeses. Add beaten eggs.
  4. Grease a 9x13" pan. Spread the mixture into the pan. Top with reserved cheese.
  5. At this point, if you are making this ahead, cover the casserole with foil or plastic wrap and place in the refrigerator. About 30 minutes before you will bake it, remove it from the fridge so that it can start to come to room temp. Preheat the oven to 350 degrees.
  6. Bake for 40-45 minutes, or until all the cheese is melted and bubbling, and the casserole has set up in the middle. Allow the casserole to cool for a few minutes, then cut into pieces and serve.

Chocolate No-Bake Cookies

These are super easy and chocolatey!  When I take them to get-togethers with other choices of cookies, these always go first!  This is a classic recipe with a lot of variations. But this is the way I make them.

  1. Combine sugar, cocoa, milk, butter and salt in large saucepan.
  2. Bring to a boil and cover saucepan for 30 seconds to allow steam to wash sugar crystals down sides of pan. Meanwhile, line cookie sheets with wax paper.
  3. Stir mixture and bring to a boil that can't be stirred down for 1 minute.
  4. Remove from heat and stir in peanut butter until smooth.
  5. Add oats and stir to mix well.
  6. Drop by small cookie scoop onto wax paper. Refrigerate.

You can also pour this mixture into a 9" square pan that has been greased, let cool, then cut into squares.

Italian Meatballs

These are called Italian Meatballs, but they can be made into just about any kind of meatball you want by changing or leaving out the Parmesan cheese.  You can make Swedish Meatballs  https://www.cherylsrecipes.net/recipe/swedish-meatballs/, BBQ Meatballs, Sweet & Sour Meatballs, etc.  You can even cut small cubes of mozzarella cheese (or any other kind of cheese) and wrap the meatball mixture around it before baking.  You will want to make a larger meatball for making them this way, though.  Meatballs always make a good dish for a potluck or a party!

  1. Preheat oven to 400 degrees. Combine all ingredients for meatballs with mixer and shape into balls. (I like to make smaller meatballs using a small cookie scoop.) Bake 15 minutes.
  2. Meanwhile, make the soup. In a Dutch oven, melt butter over medium heat. Add onions and cook, covered, just until tender. Add mushrooms and lemon juice. Cook just until mushrooms are tender.
  3. Stir in flour until blended.
  4. Add water, soup base, and pepper. Cook, stirring, frequently, until thickened. Stir in cream.
  5. Add meatballs and warm thoroughly.
  6. Serve with rice or pasta.

  1. Preheat oven to 400. Peel and cut carrots into 2-3" lengths. Drizzle with olive oil. Season with salt and pepper. Add sesame seeds. Bake for 30 minutes.
  2. Meanwhile, coarsely chop the garlic. After the carrots have baked for 30 minutes, remove from oven and add garlic. Stir to combine. Bake for another 5-10 minutes.

We buy peeled garlic from Costco in a large bag.  Then it can be put in freezer and used as needed.

Instructions
  1. Mix butter, brown sugar, egg and molasses together thoroughly. Stir together remaining ingredients, then stir into butter mixture. Chill dough. Using small cookie scoop, roll into balls. Dip top in sugar. Place sugar side up on greased cookie sheet, 3" apart. Sprinkle each cookie with 2-3 drops of water. Bake at 375 for 10-12 minutes, until set, but not hard.

  1. Brown meat mixture ingredients together with olive oil. Add all Seasonings. Note: If you are making this for another day, stop here. It will be easier to cool down and store in the refrigerator at this point, then finish it the day you are serving it. Combine all ingredients and simmer until ready to serve. You will need to add water as it is cooking so it is not overly thick. Serve with Frank's Red Hot Sauce, shredded cheese, sour cream, Fritos, sliced jalapenos, etc.

Instructions
  1. Preheat oven to 400. Line baking sheet with heavy duty foil, then parchment paper. (The foil makes it so you don't have to wash the pan and the parchment paper prevents the meatballs from sticking to the foil.) Combine all ingredients for meatballs. Using a small cookie scoop, form meatballs and bake on baking sheet for 15 minutes.
  2. While that is baking, put oil in skillet and dice onion. Begin cooking the onions while you slice the mushrooms. Add to onions. When onions and mushrooms are nearly done, add beef base, black pepper and garlic powder. Add 2 cup of water to the pan. Bring to a boil. Combine cornstarch with remaining 1/2 cup of water. Gradually add cornstarch mix to pan and stir as you are pouring. Cook, stirring often, until thoroughly mixed.
  3. Add cooked meatballs to mushroom sauce, cover with lid and bring to a simmer. Simmer for 30 minutes.
Recipe Notes

Note that the meatballs will grow when cooking because of the raw rice in them.
