Rice Pudding

This is just slightly sweet if you use the 1/2 cup of sugar called for the recipe, which is the way we like it.  If you like it sweeter, use 2/3 of a cup.  Our grandson said it tasted like candy that way!

You don’t want to overcook it, or it won’t be as creamy when it is chilled.  I find that 30 minutes of simmering is just right.  If serving it warm, you might want to let it sit for a few minutes to thicken up first.

Instructions
  1. Combine all ingredients in a large saucepan , except butter. You will want at least a 4 qt. saucepan.
  2. Bring to a boil and simmer, covered, for 30 minutes, or until the rice is soft and creamy. Stir occasionally to make sure that the mixture doesn't stick to the pan.
  3. When the rice is tender, add the butter and stir to melt. Remove from heat.
  4. You can serve this warm or chill it first. I like it just like this. My husband puts cinnamon and sugar on his.

Roasted Garlic Paste

Did you know that you can buy large bags of peeled, ready to use garlic from Sam’s and store the garlic in the freezer?  Then just remove whatever your recipe calls for and use it like you would fresh garlic, except without the hassle of peeling it!  This recipe is a wonderful way to use those bags of garlic.  I roast a pound or so at a time, then mash them and store them in a jar in the refrigerator.  Then, when I get ready to make something with garlic, I just take a spoonful out and add it to whatever I am making.  It is so easy and very convenient!!!

Beef Stew

This beef stew is thick with a deliciously flavored broth and lots of meat and veggies.  If you plan ahead, it can be cooked in the crockpot after the meat and veggies are browned in pan.  If you need to avoid gluten, wheat or soy, substitute a flour that is safe for you and make sure to use Better Than Bouillon organic beef base.

Chorizo Chili

This is our favorite recipe for chili.  If I don’t have any chorizo, I just use 2 lb. of ground beef and increase the paprika and cumin to 2 T. each.  Some of you might think it odd to add the cocoa powder or chocolate chips.  However, this adds a richer taste and color to the finished product.

Black Beans
  1. Rinse black beans. Put in pot and cover well with water. Bring to a boil. When the water boils, turn the pot off and let set for 1 hour. Drain beans, cover with fresh water and continue cooking until tender. Add to chili when the beans are tender.
Chili
  1. While beans are soaking, brown beef and chorizo with onions, sweet pepper, garlic, and oil in a Dutch oven.
  2. Add remaining ingredients (except black beans) and simmer for a couple of hours. Add water as needed for the consistency that you desire. Add black beans when they have finished cooking. This is even better if made the day before and reheated.

Caramel Rice Krispie Treats

This is just as easy as the traditional Rice Krispie treats, but uses caramel in place of marshmallows and tastes much richer!!  You can buy the caramel in 5 lb. blocks.  I get mine at a Mennonite store, but it is also sold on Amazon.

Alana’s Alfredo Sauce

This is the recipe my daughter-in-law gave me.  She says that she tweaks the ingredients, such as salt, pepper and garlic. Also, she prefers more parmesan, but our son (her husband) prefers it this way, so it is a personal preference.

Fruit & Yogurt Parfait

This is my new favorite breakfast and snack!  I love the crunch of the homemade healthy granola with the creaminess and the tang of the yogurt and the freshness of the fruit!  And it is very healthy and simple to make!  In fact, it is not really even a recipe, but just photos and ingredients.  You can make it however you like.  Our grandsons (ages 9 and 11) tried it yesterday, and they loved it!

I make my own granola in a big batch and it keeps for a long time in a tightly sealed container.  Here is the recipe:

Easy Homemade Healthy Granola

If you choose to buy your granola instead, watch for any food allergens you may have.  Most of them contain gluten.

Chili Without Beans

I made this to use in a chili cheese dip:  http://www.cherylsrecipes.net/recipe/chili-cheese-dip/

I learned that this is a Texas style chili because it has no beans.  Personally, I prefer my chili with beans, but this works fantastic in this dip!

Recipe Notes

If you don't have beef base, just use beef broth in place of the beef base and water.  Just read ingredients first if you have food allergies!

Chili Cheese Dip

I used to make this recipe for parties a lot!:  http://www.cherylsrecipes.net/recipe/chili-dip/  It was super fast and easy.

However, when I found out that I had wheat and soy allergies, I could no longer make it because every single canned chili I can find has soy (along with a lot of preservatives) in it!  I am also not a big fan of Velveeta because it is so processed.  So I came up with this recipe as a replacement and it is even better, although obviously not as easy!  It is still not too difficult though.  I will certainly be making it again!

If you would rather used canned chili for the convenience, just use 3 cans of chili in this recipe.  Or, if you have a favorite chili recipe (with or without beans), substitute about 6-7 cups of that for this chili.

Chili with no beans
  1. In a large, deep pot, brown ground beef, onion, sweet pepper, garlic, and jalapeno in the oil.
  2. Add all remaining ingredients except cheese and cream. Simmer for a couple of hours until it is cooked down and quite thick.
Dip
  1. Add cheeses to the chili. Stir over medium or low-medium heat to melt the cheeses. Add a little heavy cream for a better texture.
  2. Serve with tortilla chips. I garnished mine with cilantro. My husband liked it even better with the cilantro.
